This is similar to a dish called "kimchibokkeumbap" in Korea. However, Korean ones often add sausage. Also, a fried egg on top makes it more Korean. I have tried to make something Korean style, but my own way is much easier and the ingredients are often the ones I have at home. When I started living on my own, I asked my mother what to do about my kimchi that was nearing its expiration date. Then, my mom said it would be better to fry them because they would turn sour closer to the expiration date. Also, my mother recommended kimchi fried rice to me. My mom said it was so easy even I could probably make it.
